The Big Issue has teamed up with chefs to create the perfect Christmas dinner on a budget. And for dessert, The Great British Bake Off’s Sandro Farmhouse has suggested a recipe for festive cookies using ingredients you probably already have in your cupboard.
“What I like to do at the end of the year is just see whatever I have left and bake with those things,” Farmhouse tells The Big Issue. “It is the perfect baking-on-a-budget situation. You only really need butter and flour and sugar to bake something for Christmas.
“Anyone out there thinking they can’t afford to, you only need those three little ingredients and you can make yourself something amazing.”

So get out your mixing bowl and ingredients, and whip up some of these delicious (and incredibly easy) Christmas cookies! Your kids, and adults too, will love them.
Ingredients
- 200g caster sugar
- 120g unsalted butter (room temperature)
- 1 egg
- 1 tsp vanilla extract
- Red food colouring
- 250g plain flour
- 200g favourite white chocolate bar (chopped)
How to make your Christmas cookies
- Line two baking trays with baking paper.
- Cream the sugar and butter together until creamy in a mixing bowl (use an electric whisk or wooden spoon).
- Combine the egg with the vanilla extract and red food colouring. Gradually mix into butter and sugar.
- Mix in the flour using a spoon to bring to a dough. Fold in the chopped white chocolate.
- Use a spoon to scoop equal sizes of the cookie dough onto a baking tray, about 4 per tray spaced apart.
- Bake for about 12 minutes and then remove from the oven, allow to cool slightly before transferring to a cooling rack or tray.
