Marcus Rashford and Tom Kerridge’s pimped up super noodles

This is Marcus Rashford’s mum’s choice of recipe – pimped up super noodles! They are delicious, cheap and you’ll be using very little energy.

Pimped up super noodles are Marcus Rashford’s mum’s choice for a quick, easy and delicious meal. Your kids will love them.

The footballer has teamed up with celebrity chef Tom Kerridge on their Full Time Meals campaign. They share recipes every week which will keep your family full of healthy meals without going over your budget.

As part of The Big Issue’s Summer Survival Guide, they have kindly shared a few of their favourite recipes with us. And this one for pimped up super noodles looks fantastic!

Rashford describes this recipe as “a super quick and easy way to pimp up a corner shop staple and
make it go a bit further by adding in some veg”. It serves two people and can be made in 10 minutes.

All the ingredients you’ll need

1 carrot
Half small white cabbage
2 spring onions
1 packet of super noodles (chow mein flavour)
1 vegetable reduced salt stock cube
Half mug frozen peas
A splash of reduced salt soy sauce

How do you make the pimped up super noodles?

  1. Start by preparing the veg. Peel and grate the carrot, and slice the cabbage and spring onions.
  2. Next, pour 2 mugs of boiling water from the kettle into a saucepan over a medium heat. Add the noodles, along with the flavour sachet, and crumble in the stock cube. Give it a stir and then reduce to a simmer so that it’s bubbling very gently. Cook for 4 minutes.
  3. For the last minute of cooking, add the cabbage and the frozen peas to the pan.
  4. Turn off the heat and add the grated carrot and sliced spring onions to the pan, then add a splash of soy sauce. Spoon into bowls and tuck in.
